Pecan Muffins with New England Cranberry
Fruit Sweetened Dried Cranberries
Ingredients:
2
cups flour
½
cup brown sugar
2 teaspoons baking soda
½
cup chopped pecans
1 teaspoon salt
1 cup New
England Cranberry Fruit Sweetened Dried Cranberries
1 egg
½
cup butter
1 cup milk
Directions:
Preheat oven to 350 degrees. Grease muffin
tins.
Combine flour, brown sugar, baking soda
and salt in medium bowl. Stir in New
England Cranberry Fruit Sweetened Dried Cranberries and pecans (or your favorite nut!). Lightly whisk
together egg and milk and add to dry ingredients,
mixing until all ingredients are thoroughly
combined.
Spoon batter half full into muffin tins. Bake
for 20-25 minutes or until golden brown. Remove
from oven; cool on wire rack.
If you want larger or smaller muffins, adjust
level of batter, or use a smaller muffin cup,
such as a 12 muffin pan. |
