Orange Muffins with New England
Cranberry Fruit Sweetened Dried Cranberries
Ingredients:
3/4
cup of milk (a higher fat content will make muffins
more moist)
1/2 cup vegetable oil
1 egg
1
tablespoon grated orange peel
2 cups all-purpose flour
1/3 cup sugar
3
teaspoons baking powder
1
teaspoons salt
1 cup New
England Cranberry Fruit Sweetened Dried Cranberries
Directions:
Preheat oven to 400 degrees. Grease bottoms
only of 12 muffin cups or line with paper baking
cups.
Combine dry ingredients, orange peel and
cranberries. Whisk together milk, egg and oil
and slowly add to flour mixture until all ingredients
are thoroughly combined. Spoon batter into
muffin tins. Bake for 20-25 minutes, or until
edges
begin to brown. Cool on wire rack.
If you want
larger or smaller muffins, adjust level of
batter, or use a smaller muffin cup,
such as a 12 muffin pan.
